This flour blend is outstanding. I use it for sourdough, and the resulting flavor, crust, and crumb is wonderful. I blend it 60/40 with the Great River bread flour, and use a no-knead method and bake in a cast iron dutch oven.

5.0 out of 5 stars Best bread ever, November 4, 2011

When I got this flour I promptly made a loaf of bread, using the recipe on the bag, in a very old Sanyo one pound bread maker that I was given with no instructions. The loaf came out three inches high...hhmmmm.....
I did some digging around and came across an old book Smart Bread Machine Recipes by Sandra Woodruff. 1994
She only uses whole grain flours. What I was lacking was Vital Gluten as many of the flours in this mix are very low in natural gluten.
Now I have wonderful bread that rises properly and it is soooo good. Just the right amount of texture and nutty taste. So looking forward to experimenting as I love Russian Black Bread.
As for having to add the gluten, my thought is that older bread machines must have either a shorter rise time or lower temps or both, because I do not see gluten as an ingredient on newer bread machine recipes that use whole wheat and other whole grain flours -- I find on the web. And I read reviews that stated that they used the... Read more

5.0 out of 5 stars For Those Who Make Multigrain Dough but Don't Like a Heavy Grain Taste, April 16, 2012

I have switched from 100% white flour to a mix of white and multigrain flour for healthier breads. At first I was not happy with the limited brands I found in local stores. The taste was too heavy. I then ran across Great River on Amazon and read the reviews. Based on the reviews, I believed I had found a brand that wouldn't overwhelm the end-product with the flavor of the grains. After baking the first bread and pizza, I knew had found the brand that really works. Even my wife, who didn't want me to change my pizza dough recipe because it's the best, found my 'new' dough also produced great results. Depending on what I'm baking, I'll use Great River for 1/3 to 1/2 of the recipe with the rest using King Arthur un-bleached, un-bromated bread flour.
