Cake Ingredients: 3 cups all-purpose flour Swirl Ingredients: 1 cup Coconut Sugar Directions: Preheat oven to 350 degrees Fahrenheit. Combine oil, eggs, cinnamon, milk, and agave nectar, set aside. Combine dry ingredients and add to egg mixture. Combine swirl mixture until crumbly. Pour half of the batter into a greased 9-inch spring form pan, top with 2/3 of the swirl mixture and the remaining batter mixture. With a table knife, drag through pan in figure eight motions to make a swirl effect. Top with remaining 1/3 of the swirl mixture. Bake for 40-50 minutes or until cake tester comes out clean in multiple places. (If top is getting too brown, cover with aluminum foil.) Cool 10 min in pan, then, using a knife run it around the edge of the pan and remove sides of pan. Cool completely before moving to a serving platter. |

Ingredients: 1 cup butter Directions: Space oven racks evenly; preheat oven to 350 degrees. Cream butter and sugars together until fluffy. Beat in eggs and molasses. Mix flour, baking soda, spices and salt; add to above, just until blended. Form walnut-sized dough balls and dip into sugar; place on ungreased cookie sheet with sugar side up. Bake 10-12 minutes for softer cookies, longer for crispier cookies; cookies will crack on top. |

What I did receive was two bags of sugar, one labeled "blonde". Both sugars were caramel in color with the blonde being a little lighter. The smell and taste was very similar to brown sugar, however the texture was dryer. The granules were not a consistent size as with cane sugar. No "coconut" taste whatsoever.I wanted to bake with this sugar to see if it was interchangeable with cane sugar. Coconut sugar is supposed to be less calories and have a lower glycemic level compared to cane sugar. As I understand glycemic levels, the lower the level, the easier it is for your body to metabolize, thus not creating that "sugar crash". To compare to cane sugar, I used a 1:1 ratio as suggested by the company. I ate it raw on cinnamon toast (blonde), and made pancakes (blonde) and Toll House cookies with it (both blonde and regular). This version of the coconut sugar is recommended to replace brown sugar. By looks, I didn't see a great difference between the blonde and regular. The regular did taste a bit richer. Also, the texture of this sugar is quite different ~ it is dryer, not sticky like traditional brown sugar.Altough we don't use a lot of white sugar, we do love brown sugar for our oatmeal and little bits added to pies and desserts. I wasn't sure how our 4-yr old would take to a change in her often requested oatmeal, but surprisingly she loved it and didn't mind at all! I am impressed! I used it when baking oatmeal chocolate chip cookies and the flavor and texture were great. You substitute 1 to 1 and it has a sweet flavor. My kids love the flavor which is only slightly different from sugar. It's worth switching for the health benefits and is easier to bake with than agave. |
