Native Forest® Lite Organic Coconut Milk is a reduced fat version of our popular Classic variety. We import it from Thailand, where devoted farmers are proud to have achieved organic certification of their traditional coconut crop. While organic coconuts are generally smaller than their conventional counterparts, organically managed trees are more robust and drought-resistant, and their soil is more rich and moisture retentive. Twice-pressing the meat of these fresh organic coconuts yields a rich coconut extract that is mixed only with filtered water and a tiny amount (less than 1%) of guar gum from the seeds of the guar plant. The result is a delicious coconut milk that is excellent in soups, curries, sauces, desserts, and beverages. Native Forest® Lite Organic Coconut Milk may also replace dairy milk in many of your favorite recipes.

As a non diary alternative the milk tastes good, a little thick but its not an issue. Most of the cans are really dented, not little dings some of them you cant even open. I use prime for just about everything but not for this was very disappointed.

I like this light version for smoothies, mixed half and half with organic pineapple juice, and as a substitute for evaporated milk in pumpkin pie. I did add an extra egg to the pie for texture.

I tried this when I thought I would give up dairy and found it on Amazon for a good price with the Subscribe & Save feature. A friend had recommended the Light version for using in coffee as it is the consistency of milk and she was right. I'd tried both a can of the regular and light and the regular is very thick--great for sauces, soups, puddings, etc. but not appealing for coffee.
The cans came well packaged, boxed within another box, unlike other canned goods I've gotten from Amazon that unfortunately have arrived all dented.
The one thing I want to point out is that this coconut milk DOES have guar gum. Since I have eliminated additives like guar gum and carrageenan from my diet and am eating dairy again, I gave away the remainder of my cans of coconut milk to a friend.
